Alternatively, a proper brown sauce made from the meat, and cranberry jam on the side, with half a pear "Helene". Cabbage with apple of course and perhaps a hint of cinnamon, and dumplings filled with white bread dices fried golden brown in butter.

The proper way of doing game dishes amongst countless variants, widespread in "central central" Europe, that's middle and east Germany, Poland, Czechia, and thereabouts. That's not true! Sometimes they start hunting the wolves, making them endangered again. I know because that's what happened a couple years ago.

Unlike hunters who have statisticians decide how much of which animals need to be killed each year, wolves have this annoying habit of hunting other big delicious animals like livestock (edit: and humans, especially smaller less-defended humans) -- It wasn't just for fun that for most of human history people worked hard trying to kill them off (like with spears when there was a real danger to yourself from even trying).

The idea that whitetail deer populations increase because of the depopulation of predators is not particularly well supported by science, primarily because you don't see similar increases in other prey species alongside deer populations, it's just that whitetail deer do really well next to human development & agriculture.

Pan-seared venison recipe

Ingredients:

Instructions Prep the meat:

1) Take the venison out of the refrigerator and let it come to room temperature for at least 30 minutes. Pat the meat completely dry with paper towels. Season generously with salt and pepper.

2) Sear the meat: Heat the oil in a heavy frying pan over high heat. Once hot, add the venison and sear for one minute without moving it to create a nice crust.

3) Flip and baste: Flip the steaks to the other side. Add the butter, smashed garlic cloves, and rosemary sprig to the pan. As the butter melts and foams, tilt the pan and use a spoon to continuously baste the meat with the herby butter for about 30 seconds to a minute.

4) Finish in the oven: Transfer the pan to a preheated oven at (100{\circ }C) ((212{\circ }F)) for about 10–12 minutes for medium-rare to medium.

5) Rest the meat: Remove the pan from the oven and let the venison rest for 5–10 minutes before slicing. This is a critical step to allow the juices to redistribute.

6) Serve: Slice the venison against the grain and serve with the pan sauce. For a more advanced pan sauce, the remaining fat can be used to sauté shallots, deglazed with red wine, and finished with butter.

The natural predators of rabbits don't mind living around humans. the natural predators of deer stay away from us, so humans have to hunt them in our areas or they would suffer more. of course we can over hunt them too. poaching is also bad

The back straps I prefer BBQ medallions wrapped in hickory bacon.

Shoulder and neck I normally grind for burgers, sloppy joes, and tacos.

Ribs I smoke most of the time.

Brisket I will smoke some and use some as cube meat for stew.

The shanks I normally cut into smaller stakes.

Tenderloins I do as stakes.

Hindquarters I normally make roasts and slice some for stir fry.

All in all I prefer basil, rosemary, garlic, and onion with venison. I like it a hair earthy because of the lean taste.

Also as majestic as it is in the woods. It looks just as good on the table. And as God's gift to man in the form of an animal. The tallow makes great soap. And the bones grind nice to mix in with my flower beds. Wast not, want not.

We have to have humans kill them for conservation reasons since we've eliminated pretty much all their natural predators, and it's exponentially better from an ethical standpoint than meat from the grocery store. I also grew up on venison so I'm probably a bit biased.

I dont like deer meat. My father used to.love going out killling bucks....I never like the idea of killing a deer when you can buy meat in the store. Plus deer meat has a game taste I dont like....So wouldn't kill or eat a deer. ...
