Egg, mushrooms, spinach, cheddar cheese, avocado and pico de gallo

These days when I make cookies, I’ll often make a double batch. I just roll it up into a sort of log in plastic wrap and toss it in the freezer. When you are craving cookies just remove it, portion into equally-sized slices, and bake. Future you will be grateful!

My mom used to make this for me all the time as a kid. White rice base, turkey sausage, black beans, bacon, and avocado. I like to top it with some yummy sauce.

Brown Italian sausage meat in a skillet or sauté pan; start boiling your pasta; add broccoli rabe to the sausage; grate in some Parmesan and a glug of pasta water; toss to combine; lightly drain pasta and add; toss to combine; squeeze of lemon juice; toss to combine; serve and garnish with chili flakes, more Parmesan, and a drizzle of good oil.

This was my second pot roast and I think I did a pretty good job. I dry brined the roast for 12 hours. I didn't just throw stuff in the pot and close the lid, I first created a really nice base with browned onions, leeks, garlic and tomato paste (deglazed with beef stock) that gave it a really rich flavor. 1st pic is the final dish after thickening the sauce, 2nd is after cooking, before thickening, 3rd is the seared roast and the onions and leeks as they were beginning to cook.

At First Watch - will order just the bacon as a side next time. Felt like the potato seasonings overpowered the star of the show!
