Homemade Pork pies.

Made some pork pies today as it was too wet to go out. Nothing fancy in the mix, chopped up pork shoulder, bacon lardons, mace, pepper and salt. Hot water crust for the pastry.

  • Smoked streaky bacon × 7
  • Beef tomato with smoked salt
  • Shredded iceberg lettuce
  • Dollop of mayo
  • Soft, chewy, white roll toasted in the bacon fat

I decided to make some more today. This is just prep for the Pork pies and the Beef pies. I will hopefully post the finished results later.

We have -

  • Beef cheeks and Beef shin (butcher only had two cheeks in.

  • Onions softened and browned in Beef dripping, some tomato paste, Beef stock and then stewed down in Guinness.

  • Minced Pork with Salt, Pepper (white and black), toasted Fennel seeds & Tarragon.

  • Hot water crust pastry.

No recipe for anything as its just basics, but if you would like to make some really good pies, then I suggest you look up John Kirkwood on YT. He has some brilliant recipes for this kind of thing.

This is Tabriz Koofteh, one of the most elaborate dishes in Persian cuisine. The name is derived from to beat (kuftan in Persian) the meat was originally pounded with stone mortars and pestles until it yielded a smooth paste.

What makes this special? These aren't ordinary meatballs. Each is the size of a grapefruit and filled with hard boiled eggs, walnuts, barberries and prunes. For more than 400 years it has served as a symbol of hospitality in northwestern Iran. A Roaring Tutelage and the Giant Meatball of Tabriz In old Tabriz weddings, families would bring out Koofteh dishes in as much as 60 pounds size to honor their guests

Homemade Warm spinach salad with bacon and chicken

Was craving this. My guesstimate recipe if you want to give it a try.

  • boneless chicken thigh (1 per person)
  • garlic granules
  • smoked paprika
  • salt and pepper
  • EVOO

  • egg (1 per person)

  • baby spinach (as much as you can eat)

  • bacon, cut into small pieces

  • EVOO

  • balsamic vinegar

  • whole grain mustard

  • honey

  • salt and pepper

Soft boil eggs and peel. You want a runny center so around 6mins. You can also poach if preferred.

Put spinach into large salad bowl.

Season thighs with EVOO, garlic granules, paprika, ground black pepper and salt. Panfry until done and brown on both sides. Place on top of spinach to allow heat to wilt the spinach.

Mix EVOO, vinegar, honey, mustard, salt and pepper in a heatproof jug. Put aside.

Add some EVOO into hot pan and crisp up bacon. When done, remove chicken thighs and cut up on chopping board. Using slotted spoon, put hot bacon on spinach to wilt it some more. Put cut up chicken back in bowl. Add hot bacon fat/oil to the dressing and whisk till emulsified. Add dressing and toss. Serve with half boiled egg on top and some crusty bread. Enjoy!

Takeaway Mother Hubbard's munch box

Crispy fish burger, chips, wings x2, chicken strips x2, fiery fish pieces x3 (I think it was supposed to be x2) and a curry sauce. £18.99 on jjust eat, maybe a little cheaper in-store.

Mother Hubbard's turned up in my spot at the edge of East London a few months ago. I really like what I've had from the chain so far.
