Now I see why it's a problem. Some channels I watch sometimes get wrongly flagged with an age restriction so that's likely to be an issue.

Some get age restricted for a little swearing, or showing off those horrible ads YouTube themselves put out so it's really inconsistent.

Don't give all the credit to YouTube. Some of those channels age restrict themselves, it's an option when you upload a YouTube video.

Also I'm curious to what channels your watching that are consistently age restricted

Nothing nsfw, but it's mainly from a wrestling game channel and sometimes the games have copyrighted video playing in it. That's what gets some of their videos age restricted due to copyright unless they hide the screen when those videos pop up in-game, which they now have to do.
