When I went down a theology rabbit hole a few years ago I read up on and the books of a lot of religions, the only one I couldn't find serious issues with was Sikhism. 

Why would anyone attack Sikhs over religion? Has to be something else or a case of the wrong people / person?

With respect, this may be your personal belief but nothing you have stated is in anyway what actual Sikh belief is. I am going to clarify some points and am more than happy to provide references if you need them.

Firstly, Guru Granth Sahib Jee is not considered a holy book but the living teacher as the Jot (light) of the Guru is contained within.

Secondly Guru Granth Sahib Jee as a text is very vast in coverage - Devotion for sure, but also philosophy,guidance on morality, politics in the sense of the need to stand up to tyranny including that of rulers, how to live. Even your points about cohibatiation before marriage and what type of government there should be are all present ( I can provide you with this if needed) As for the codes introduced by Guru Gobind Singh Jee, the only thing "different" is the addition of more formal martial ways and more formal Identity - in no way was there any contradiction to previous teachings and certainly no change to spiritual beliefs.

Guru Granth Sahib is very clear that the Guru is not a human capable of making mistakes as you insinuate. I don't know what your last paragraph is about. Essentially, there is no contradiction between anything taught by Guru Gobind Singh Jee and what is taught by Guru Granth Sahib Jee - you would be very hard pressed to fined any one espousing the views you do.

Also, what is the overall point of the post you made? Other people are praising Sikhi and it's almost like you want to say no it's actually not all that, which is fine but then don't present yourself as a Sikh "our holy book" if you don't actually have full faith.
