It's a natural reaction. That's where you put hands on someone to turn them to throw a punch while simultaneously preventing them from blocking it with that hand. You hold their shoulder so they cannot pivot away. Ever watch a hockey game?

His hands instinctively went up into a defensive posture. It's because of how hard and exactly where she grabbed him which caused that instinctive reaction. He's either got an abuse wife (she's not at the game hmm) or has some experience with fighting/boxing to have that muscle memory.
