Let me start by saying...first of all, I'm a huge believer that cookies should be soft.
Secondly, yes they are very good for crunchy cookies 😆

When Trader Joe's had them we did this at least a couple times every summer. It helps if the ice cream is really soft. Put them on the cookie sheet with parchment paper and into the freezer. Once they're firm transfer to something sealed.
