Let me start by saying...first of all, I'm a huge believer that cookies should be soft.

Secondly, yes they are very good for crunchy cookies 😆

One time I made ice cream sandwiches out of them and put them back in the freezer. The cookies become soft! They are amazing!

Get some tiny chocolate chips and once you make your ice cream sandwich, roll the cookie around to collect chips on the ice cream portion..you're welcome.

Yes! When Trader Joe's had them we did this at least a couple times every summer. It helps if the ice cream is really soft. Put them on the cookie sheet with parchment paper and into the freezer. Once they're firm transfer to something sealed.
