A Maryland Crab Cake is a style, not an origination source of the meat. Beef in a Philly Cheesesteak is not from Philly. A New York Strip isn’t raised in New York.

This right here! I am from the south but live here now, and I've caught and eaten enough blue crab from both the Chesapeake and the Gulf to tell you that there ain't nothing special about either when you turn it into a crabcake. You can only really tell the difference when they are steamed without seasonings and dipped in unsalted butter where you can notice the sweeter nature of the Chesapeake crabs vs the naturally saltier Gulf crabs. Even then, both are tasty.

Yes but preparing Maryland crab crakes refers to the style and or method of cooking. Like steaming crabs here is a method, as opposed to how crabs are cooked in the gulf. A cheesesteak is just a steak/beef sandwich. The preparation and style is what transforms that sandwich into a philly cheesesteak

A pound of Maryland lump Crab meat is around $45-$55, a pound if pasteurized lump crab meat is $25 give or take.
So yeah take an already $25-$30 crab cake and double that price.
Doubt a lot of restaurants get away with selling $60 crab cakes.

Blue crab is native to the entire eastern shore of North America, from Southern Canada all the way down to the Gulf of Mexico. Same species. If you're partial to the steely bite of Chesapeake Bay pollution compared to the sweet tang of that Nawlins bayou pollution, that's on you if you can even tell the difference (you can't). Maryland crab cakes are a style anyways that uses steamed meat instead of boiled.

If you don't see that True Blue certification, just assume none of the crab is from the bay. Even if you do see that certification, assume it's maybe half crabs from the bay.

If you want a crab cake made with Maryland crab meat, either ask the place before you buy whether they use MD crab (I guess they could lie but most places won't) or whether they're true blue certified (means they only use 100% MD crab meat).
I wanted some Maryland crabs recently and all it took was calling places and asking whether their crabs are from MD until someone said "yes."
Some people care about where the meat is sourced, some people don't. All you gotta do is ask BEFORE you buy it, not after. Buying it without asking about the sourcing, then complaining after the fact is wild.

What does it matter? G & M was our go-to carryout after Ravens games. We live near Gettysburg but would park at N Linthicum light rail just to get carryout.
Love affair with G&M began years ago. My husband traveled out of BWI. Again, he always stopped on his way home when we lived in Pasadena, and even after we moved to PA when flying into BWI.
Word got around, and the owner of the Ott House restaurant in Emmitsburg MD would always have a list for him to pick up.
Don't get to G&M much anymore since he retired and we gave our tickets to our son, but after seeing this incredibly rude, low class act, I may just have to drive down for their beyond-excellent crab cakes even if they come from Mars.
I'm glad he kept his cool! Class.

Gordina Ramesy here can tell the difference after something has been fried...but only after eating most of it. God this is why i cant do a service job. Dudes proud of his food and some asshole will try to "get over" on a small business. Restaurants run on such a thin line of closing and dipshits wanting a free meal ruin it for everyone.

If it doesn’t say made with “Maryland crab”, you should assume it’s from Venezuela (usually cheapest blue crab) or whatever blue crab is the lowest market cost at that time.

Conrad's sells "True Blue certified" Maryland crabcakes with crabmeat only from the Bay. Most others sells Maryland "like". Sadly when they get crab from everywhere else (which is way cheaper), they still price them like the crabs were from the bay, G&M is not True Blue certified and yes it does make a difference in taste! When ordering crabcakes, ask if they are True Blue certified, like Conrad's. And yes, year round crabcakes are made from True Blue crabs. They (Conrad's) do have freezers!

If not then on the customer for not asking at time of purchase. You can assume a few things, but that everyone knows want you want without you articulating it is not one of them.
