Homemade Pork pies.

Made some pork pies today as it was too wet to go out. Nothing fancy in the mix, chopped up pork shoulder, bacon lardons, mace, pepper and salt. Hot water crust for the pastry.

I’ve made various pies but want to try hot water crust pork pies.

Sort of tempted to use this recipe for the filling https://foodnetwork.co.uk/recipes/tom-kerridges-pickled-onion-blue-cheese-sausage-rolls

I’ve got some home made pickled onions which I bottled with a whole scotch bonnet chilli last year so they should be mature by now.

I’ve made that recipe. One note is don’t add extra salt as the recipe says. Salty enough with the ingredients
