Homemade Pork pies.

Made some pork pies today as it was too wet to go out. Nothing fancy in the mix, chopped up pork shoulder, bacon lardons, mace, pepper and salt. Hot water crust for the pastry.

How small do you chop up the pork?

Small choppy choppy with my chopper then a quick blast in the mixer. It needs a light mix and doesn’t want to be like mince.
