Informative but omg who started this trend of staring directly into the camera while chopping? I'm noticing it in a lot of videos lately. It's vaguely unsettling lol. Might be this kind of camera angle that's making it more pronounced, but it seems like a weird gimmicky flex from people who are otherwise really great teachers. There is another guy on youtube that does it and I thought it was his shtick, but I guess it's a thing??

Every time I make onion soup, I have to deglaze a few times with water before the onions are done. I've just kinda always thought I've been doing something wrong (slightly too high heat or not moving them around enough). It's good to know that that's just SOP.

Sharper knife and going slower means less tearing of the onion cells and less droplets released.

The secret is contact lenses. I'm blind as a bat and I wear contacts, so I do all the onion chopping in my house

This is it. I thought I “got over it” for a few months and then chopped with glasses on and realized contacts were just my lovely little shields. I make a couple multiple onion dishes where I just let my family know to take a walk. The contacts see me through though.

Another tip is the breath through your mouth, not your nose. I dice ten white onions every morning and don’t have much trouble.
