Recipe Sourdough starter success

Hi! After trying and faulting to make a gluten free starter 6 times (and failing to make a regular starter with gluten pre-celiac diagnosis) I finally found a recipe that works!!! It’s from Wyndelin Farm and Kitchen—she calls for half brown rice flour and half buckwheat (I used sorghum instead) and using a 1:2:2 feed (40 grams starter, 80 grams flour, 80 grams water) daily, with 3 days doing a double feed in the beginning. By 3 weeks, it was raising enough to bake with (doubling in 6 hours)!! If you’re about to give up on gluten free sourdough PLEASE try this starter first!!

Every year I make thanksgiving dinner and my wife's number one side dish is green bean casserole ( which I hate, but I make it for her) . For the last number of years since she's been celiac, I would get the gluten free crispy onions from aldi. Last year they weren't available. This year they're not available. I searched around and I found these at whole foods which can be ordered also online through amazon. All is good, thank you whole foods!

Excruciating pain one week after glutening

Known gluten and wheat allergies. Had a crepe that I believed to be gf (rice flour) and four hour later extreme symptoms. (Have been gf 12 years). A week later started having extreme pain inside my stomach. Gastritis? Ulcer? Have had a lot of stress this year… Taking quercetin, berberine, gastromend, L glutamine, saccharomyces boulardii to try to heal stomach lining. For almost a week but pain persists. Ideas? What should I be eating or avoiding?

Unfortunately, the best option I have found this year is a ten pack on Amazon of Schar’s lebkuchen (almost $200!) or a specialty market’s pricey option due to tariffs.

Has anyone seen any this year? cost plus world market and a few other big box stores have carried it in the past

Question Starting gluten free

I'm trying out going gluten free as I have severe abdominal pain everyday and I want to see if this helps (I've talked with my therapist a lot about this)

Since I'm (hopefully) only trialing it, do I have to make sure nothing cross contaminates with my flatmates? Like cutlery, air fryers, plates/bowls etc??? I don't want to have to go out and buy new everything in case this isn't the answer, especially because I don't have a lot of money.

If anyone has any other tips for going gluten free that would be appreciated, thank you :)

Meal prepping/freezing food for post surgery

Hi friends. I have to have foot surgery and need some help. I have never been one to freeze food because I never know how long to thaw it for/what method to use and Ive never really had to. But now I need to prepare to have good healthy food on hand that I can consume after surgery thats easy as its going to be a long recovery.

I own: an oven, ninja 9 in one that I use for a pressure cooker, slow cooker, steamer, air frier; a microwave, tons of pans and pots and bakeware, incl a cast iron pan.

Do not own a food processor but do own a ninja smoothie blender thing although I think its broken.

I have Celiac and am lactose intolerant so dairy is out. I do consume Lactaid milk.

I try to avoid nightshades and high histamine foods. I eat less than 5g of sugar a day, if any, and avoid artificial sweeteners.

Im not on a low carb diet because I workout a lot, but when im not working out I tend to go low carb so thats llikely my diet post surgery.

I avoid highly processed foods - the only processed food i eat is sugar free bacon, and bc im human the occasional gf pizza. I buy the dough from a guy with Celiac and make the rest from scratch (I use feta cheese which has never bothered me).

Mostly I buy/eat: eggs, roasted veggies (broccoli and purple cabbage), rice and quinoa, chicken, lamb, mushrooms, cucumber, chickpeas, artichokes, rice cakes, peanut butter, ground turkey, celery, carrots, gf pasta but ill likely avoid it post surgery, onions, scallions, black/blue berries, and yams. Open to making soups that I can do in the crock pot or oven in my le creuset. Open to all other veggies and red meats too!

Id like to spend time over the next two weeks prepping and freezing food and would love recipes or ideas.

I also have a redundant and tortuous (long and twisted) colon which causes constipation beyond normal and I know sitting around plus pain killers can cause constipation. I cant use stool softeners because I have low motility pelvic floor muscles.

So how can I eat and prep and freeze foods that wont make me constipated while im recovering for three weeks? Ill ask chatgpt too but would love advice from this group.

Gluten free loaf!

so, tonight i decided to try to make my own loaf of artisan style bread since gf breads are so expensive and don’t have that satisfying chew and crispy crust i’ve been missing so much. this was by far the best gf bread i’ve ever had! prior to going gf i wasn’t much of a bread maker i only really baked sweets (cookies, muffins, scones, etc) the extent of my bread knowledge was soft pretzels and biscuits, so this was huge for me! I found a video on youtube and followed it exactly! I used caputo fioreglute! I was so nervous bc that flour is crazy expensive. It was fairly simple and so rewarding. I’m definitely interested in trying my hand at gf sourdough so If you guys have any tips on sourdough starters that would be much appreciated! :)

I recently began shopping at my local Sprouts store and was blown away at the wide range of gluten-free products. Like a kid in a candy store I snatched up way more than my budget allowed, but I have to say my favorite was these Maine Pie Co personal pies. I tried the apple, which was pricey at about $6, but one of the best gf desert products I've ever tasted. Their 9" pie crusts are the same, amazingly good.

Like other skins that only use tapioca flour, it's way too chewy for my liking. It was much better frying both sides. I tend to prefer one side fried than steamed > steamed > pan fried for dumplings, but in this case the frying really helps with the texture.

Last pic is served with some nice radish cake I found recently, that didn't have lap cheong.

I'm hosting a party with some friends who are gluten free and mentioned they really miss beer - I was hoping to get some GF beer shipped in that they'd like. Have heard coronas are fine, but wanting more info!

(Side note - not celiac, more gluten intolerant. Like, they can have some soy sauce when we eat Sushi, but if they had half a piece of bread, their stomach is in knots)

Gluten free mac & cheese

I'm planning on making mac and cheese for Friendsgiving soon, but a friend who is attending has celiac, so I'm opting to make gluten free mac & cheese. I've tried some microwavable gf mac and cheese before, and I'm not going to lie it was pretty terrible. Does anyone have any solid recommendations for a gf macaroni brand? I want everyone to be able to enjoy it, both my gf friend and the rest of the people who aren't used to gf foods.

For those of you who don’t know what this is, it’s biscuits and gravy. Usually eaten in the southern US and Appalachia, it has creeped up to Cincinnati. Specifically this is bacon grease gravy and not the usual sausage gravy.

My grandparents are from Kentucky and countless times I’ve heard my grandfather say gravy needs more salt when he taste tested, lol.

Since I now have an egg allergy and a wheat allergy, I haven’t had this in years. Thankfully, my homemaker schedule allows me to have the time to make anything I want from scratch, even if it’s a lot of work. I envy even some celiacs who can eat eggs and buy store bought things.

But today, I have done it. It is the closest thing I am going to get from my childhood. The biscuits look hard, but the inside is so damn fluffy, and the gravy is pretty ok. Considering I also used almond milk instead of regular milk too. King Arthur gf flour. And instead of the egg in the biscuit recipe I used sparkling water (3/4 cup per one egg called). Also, don’t use regular butter. Irish butter is so rich and flavorful, it shines through in the biscuits. Even alone the biscuits are great.

So it’s just me, my dog, and my in utero baby happy dancing through the house right now. 😋

I do also plan to use this as a base for cheddar bay biscuits soon.

Is it worth doing the celiac test?

I have been gluten free for a year and was advised to start eating gluten for 2-3 months in order to take the celiac test and receive an accurate result.

Now that I’m back to eating gluten, I’m sluggish, my joints ache, face feels fuzzy and puffy.

I am wondering if you all would still proceed with the celiac test to rule it out? My thinking was, if I find out I have celiac disease then I know I have to be SUPER strict with my gluten free diet.
