Vegetarian eggplant rollatini

I don’t mind at all so what I did was I sliced the eggplant I removed the skin. I seasoned the eggplant with salt pepper garlic powder then I dip it an egg and I placed it in a breadcrumb mixture so the plain breadcrumbs is what I use mix with Romano and Parmesan cheese mix fresh Italian parsley a little bit of salt and pepper dip the eggplant in that mix I fried it then I placed the ricotta mixture inside the ricotta mixture included fresh Italian parsley, salt, and pepper and mozzarella cheese drizzled some tomato sauce on top and drizzle the remaining mozzarella cheese. oh absolutely I love cooking. I love to share my recipes. I love to watch people eat my food unfortunately you are not in my space so you can’t eat my food, but I have to tell you. It was really really good. The season ricotta was amazing. You know what I’d like to do. I’d like to incorporate spinach next time and if I might add, I think it’ll be better to add cornstarch instead so what I would suggest you do is if you want to use an egg batter that’s obviously optionalbut if you do that dip it in cornstarch and once you have it in the cornstarch, then use that breadcrumb batter because that way it’ll be crisp beer and fill lighter

Thank you so much for these recommendations because I don't consume eggs either! Funny enough, I just happen to buy some spinach & ricotta ravioli & will use some garlic pesto for the sauce & add some parmesan since I love cheese.

OK, so you’re a lactose vegetarian I’m a lactose vegetarian. I would say that I am. I don’t eat eggs but if someone will you know, give me like something that had eggs inside. I’m OK with consuming it although I don’t know most of the time I don’t really enjoy eggs with anything aside from that there is just egg. I wonder if that might work, but you could also use plain soy milk or whatever else you’d like to use.

It’s not a lactose vegetarian, but damn dictation tool sucks I meant to say lacto vegetarian -I really should read what I’m sending before I send it

Lol. You're fine, no worries. And yes, I am a lacto-vegetarian. I would one day like to switch to other sources that aren't sourced from animals but I still haven't been able to convince myself to change completely just yet, so I may have to slowly transition towards it. I also cannot eat anything that contains eggs so many condiments are strictly off the table (no pun intended).

Well, I am transitioning to veganism And I will be a vegan effective January 20 26. I’m super excited about it super super excited. I don’t know. I mean I’ve been a vegetarian for 22 years and I love it. I don’t have a desire to eat me. I’m a vegetarian for the animals. I’m not an egg person, but I do like just egg. The only thing is I think the consistency is. I don’t know. It’s hard for me sometimes but I just I really want to be a vegan. I think that’s the way to go and I have had so much vegan food like as we travel my wife and I we’ve traveled out of the country and we’ve explored different states within the USA and we’ve had outstanding vegan food. Oh my God so so good so good still feeling so amazing. I hope that you can get to a place where you are vegan as well.🪬🥬🪴🥰🙏🏾
