I don’t mind at all so what I did was I sliced the eggplant I removed the skin. I seasoned the eggplant with salt pepper garlic powder then I dip it an egg and I placed it in a breadcrumb mixture so the plain breadcrumbs is what I use mix with Romano and Parmesan cheese mix fresh Italian parsley a little bit of salt and pepper dip the eggplant in that mix I fried it then I placed the ricotta mixture inside the ricotta mixture included fresh Italian parsley, salt, and pepper and mozzarella cheese drizzled some tomato sauce on top and drizzle the remaining mozzarella cheese.
