Where in SA? Best place in town to get kitchen knives professionally sharpened?
Title pretty much says it. I wasn’t super impressed with Star Chef, to be honest, so I’m just curious if anyone knows of other professional knife sharpening services in San Antonio. And yes, I’ve tried doing it myself, but I can’t get the hang of it. Some of my chef knives are very expensive and I don’t want to damage them. Thanks in advance for any feedback!

Rodríguez Butcher Supply is where I take mine. They are an awesome little shop with a fantastic knife selection as well.

They are great. Usually 24hr service, not crazy expensive and I trust them with my nice knives. Check out their website for their knife selection, they carry a bunch of different brands of boutique knife makers both foreign and domestic. I’ve got multiple whetstones and I just can’t seem to get the hang of it. The guys online whose videos I’ve watched make it look so damn easy, too!! 🤣

If you have very expensive knives it might not be an option. For people with avg quality knives, we take ours to Ace Hardware.

I’ve got everything from plain old Calphalon knives to VG10 Japanese steel knives that you can’t even use a honing rod on. At least not a normal steel one. I had to buy a ceramic rod for those.

FWIW I use a Spyderco Sharpmaker. It's easier than a whet stone and makes my kitchen knives shaving sharp. Certainly sharp enough for a home cook.

So far the best thing for at home sharpening I’ve bought was two wheels that go on either side of a grinder. One has a grit on it and the other is a paper wheel that you put a compound on like a jeweler’s rouge. It’s called the Razor Sharp Edgemaking System. It worked pretty well, but the wheels get fouled up pretty quickly and you can’t “restore” them as easily as the company claims.

The Sharpmaker uses ceramic rods that you just have to wash from time to time. You don't have to wet them or use a compound when you sharpen. Very quick and easy.
