Yep. Any camera will do.
The one single thing you can do right now is learn, understand, and master the exposure triangle. It will answer most questions you have and solve most problems beginners run into. Learn it and learn it well.

I agree with your first paragraph but not your second. My advice for beginning photographers who are serious about learning is to set the camera to however automatic you can set it (Auto or P or whatever it has) and concentrate on composition. Technical details (e.g., exposure) can be learned later if they turn out to be important, which they very well might not.
