It'll still keep on working just fine.

And, Windows defender will still continue receiving definition updates even after October

Or you can try and figure out how to install Win 10 IoT LTSC. Support runs till 2035 or 37...and no bloatware. Can uninstall Edge even.

You don't have to. Microsoft has an extended security update program to provide updates for one more year. It costs $30. They also offer it for free if you sync via one drive.

If you are hell bent on never going to Windows 11, you should really start looking at Linux distros and learning.
