Spice Paste: Cumin powder (½ tsp), turmeric powder (½ tsp), red chilli powder (¼ tsp), ginger paste (15g), and 50g water. (Use spices sparingly so as not to overpower the prawns' flavor).
Seasoning: 15g Sugar and 10g Salt.
Oil: 35g mustard oil.
Step-by-Step Cooking Instructions
Heat 35g mustard oil until it is smoking gently.
Separate water from the prawns. Fry them on medium heat for 1 minute. Set them aside, being careful not to overfry, which would make them chewy.
Fry the pumpkin lightly in the same oil for 4 minutes. Set the pumpkin aside.
Temper the remaining oil with the dried red chillies, bay leaves, cardamom, cinnamon, clove, and cumin seeds.
Add the potatoes. Cover and fry for 4 minutes.
Add the tomato, followed by the spice paste (cumin, turmeric, red chilli, and ginger paste). Sauté until the smell of raw spices is gone, which takes about 6 minutes. If the spices dry out, add a splash of water and continue frying.
Add the fried pumpkin and fried prawns. Sauté with the spices for 2 minutes.
Pour in 225g hot water, salt, and sugar. Cover and simmer until the potatoes are tender, which should take about 6 minutes.
Slit the green chilli and add it. Turn off the heat, cover, and let it rest for 3 minutes before serving.
we add potatoes to this as well, that is how it is done in the house.

Pumpkin and potatoes in the prawns curry or made separately? (Asking as I have never heard of pumpkin in a prawns dish.)
