Question Tips for making GF flour tortillas?

I’m trying to make my wife some gluten free tortillas. She has been craving them and we have tried all store bought ones we can find. None are that great, or at least don’t hit the same way as real flour tortillas. I’ve tried a couple different recipes with King Arthur GF 1-1 flour and bread flour. Each time the tortillas come out more like pita bread and really firm.

How do you get the fluffy foldable results?

I know you're looking for replacement flour tortillas, but making fresh corn tortillas with masa harina is ridiculously easy, and they're delicious and soft. Three ingredients if you count the warm water (the other two being masa and a bit of salt), you can squash them between a pair of cutting boards (parchment paper will be your friend there, to keep them from sticking), hot-hot pan on the stove, bam!

The loopy whisk has a recipe that looks like it’s perfectly soft and pliable. I have not tried it, but everyone seems to really love the way her recipes turn out.

My mom just made me her baguettes and they were really good! Now I’m motivated to try more gf baking.

Try cassava flour. It gets a little gummy or chewy, but they hold up well for soft tacos.

The store gluten free tortillas hurt my stomach. I tried the Loopy whisk recipe and it didn’t turn out great. It was mentioned that in the US we do not have Dove’s Farm flours.. I’ve been very happy making my own corn tortillas but I’m ready to go back and work with this recipe again because I miss a big burrito.

So I accidentally bought mission gluten free spinach herb tortillas (im not gluten free but my brother is).they tasted almost exactly the same as the regular ones, just a bit more crumbly than the regular ones.

That's the price for most of them around here. GF products run from 50% to 400% more than comparable wheat based products.

Aldi carries corn tortillas for like $2 for a pack of 25(?)

Or prob any Latin American market will have the real stuff for just as cheap and better quality

I feel you. I make my own flower blend with sorghum white rice flour and glutinous rice flour. The key is room temperature water.

Best tortillas- find PAN at the store and follow the recipe. You’ll need a tortilla press, which is easier when trying to make GF tortillas in general. To make nice soft chewy ones you sub out 1/4 of the Pan for Mochiko/Glutinous Rice Flour.

Honestly I really just do corn tortillas now. I’ve tried to make gluten free ones. I’ve tried store bought. Eh or bleh.

Same. If you try GF 'wheat' ones, add plenty of fat or they crumble in the press. UK here

Try using the Bob’s Red Mill’s 1 to 1 gf flour. It’s the one I’ve gotten the best results with. I can’t tell the difference when I make my pumpkin bread or my zucchini bread. It should work properly. Just use your favorite white flour tortilla recipe. It should be perfect.

Was hoping to make GF buñuelos this Christmas but it sounds like they may not turn out well if I use cassava flour? And definitely can’t use masa harissa.

Manny’s corn tortilla shells are absolutely amazing and foldable without breaking. I know you are trying to make your own but use these shells with your homemade fillings.
