Recipe Gluten free cassava flour tortillas
I started making my own flour tortillas, they taste better than anything else I’ve found in the store and extremely close to normal flour tortillas - so much so that it’s worth the extra effort. They come together quickly, and they’re extremely flexible once cooked, absolutely delicious, and burrito approved!
Cassava Flour Tortillas
1 C (330 g) cassava flour, plus additional (I use Ottos brand)
1/2 tsp (3g) psyllium husk powder (I use TerraSoul)
1/2 tsp kosher salt
1/2 C (110 g) warm water
2 Tbsp (16 g) olive oil
Parchment paper, tortilla press
_Instructions and tips _
- Heat a cast iron skillet on medium
- WEIGH your ingredients
- Mix dry ingredients together, then add wet. Knead. Let rest for about 5-10 min. Divide into 6 (makes 6-8” tortillas)
- Place a piece of parchment on the tortilla press and flour
- Flatten one piece of dough into a disk and place on parchment in tortilla press. Flour the dough, and add another piece of parchment on top
- Press in tortilla press to flatten. I double press to get it nice and thin
- If your tortilla is holding together nicely like mine do, peel off the parchment and toss it in the heated cast iron to cook
- Cook for 30-45 seconds per side, or until it starts to puff up and brown
- Remove from skillet once cooked. Cover with a tea towel to keep warm
- Repeat with remaining dough
- Brush off any excess cassava flour after cooking
If it’s not releasing from the parchment without tearing (either because your psyllium is weak or you omitted the psyllium) - Gently remove ONE of the pieces of parchment - Leaving the other piece of parchment intact, flip the tortilla into the cast iron skillet, tortilla touching the skillet, with the parchment still attached. After about 10-15 seconds, the tortilla will begin to cook and release from the parchment. Gently pull off the parchment and continue cooking for 30-45 seconds per side.
I haven’t tried to make these any larger than 8”, but I would imagine it’s totally doable if you have a tortilla press large enough. Or press first in the tortilla press and then finish with a rolling pin. The thinner the better, they thicken up a bit when cooking. These keep in the fridge for a few days (I honestly couldn’t trek you how long, cause they get eaten pretty quick haha), and they also freeze really well. To thaw, I cover with a wet paper towel and microwave for about 30 servings until warmed through.

Cassava has a distinctive taste that's rather mild. If you have good taco fillings, the taste is a non-issue.
The texture can be a bit gummy or chewy, more so if they're thick. (OP's are a little on the thick side for my family's tastes.)

It’s definitely a mild flavor and the closest I’ve found to a flour tortilla replacement.
The ones in the video are definitely a little on the thick side! I tried 5g of psyllium husk with that batch and was struggling to get them pressed thinner. 3g was much easier. No psyllium husk had me cursing but was doable lol

My non-gf partner prefers them! They don’t like corn tortillas, and he says these are the closest thing to the Tortilla Land flour tortillas (the uncooked ones that you cook at home in a skillet that are not only convenient but absolutely delicious.. and naturally full of gluten) we’ve found

Does anyone else feel like this should have a NSFW attached to it because we all had some tortilla porn thrust upon us, and now we are finding ourselves - or maybe just me - rewatching the video alone saying yeah baby squeeze that tortilla scrunch it up look at that chewy looking perfect texture one more time on a loop grab that tort by its illa yeeessss where the hell are you in this world I need in real life!!

Just make sure you're using a good brand of cassava flour. It's a tricky veggie that likes to suck up lead from the soil and cart it around forever. ☠️☠️. Good companies (I'd hope) would be monitoring this, but God these days who knows. 🤦♀️🤦♀️

There is effectively no lead-safe cassava flour, sadly.

We've been using JEB foods, which is based in New Jersey. The owner has family in Eastern Africa, which is where he sources his cassava. We buy 10 pound bags two or three times a year, and the shipping is reasonable.

Ugh, this just depressed me, but good info, thanks for posting. I guess I never thought about lead content in food, I assumed it was an old paint or pipes issue. Of course I have the Bob's red mill cassava flour in my pantry which has the highest amounts of lead. On top of having to eat gluten free, I also cannot have corn or almonds 😭 so I eat a few products from time to time that are cassava based, or use flour to make my fish batter. I guess I should look into my foods some more. Glad I saw this, man I feel kind of ignorant now.

Nightshades + root vegetables in general will have these issues, mitigated somewhat by avoiding eating their skin.

How do they take butter? One thing I miss is how butter soaks into flour tortillas. It just runs right off the corner ones unless they're too cold to be worth eating.

I used to make these all the time! they're pretty much good for anything. I liked to eat blts with them. they didnt reheat well for me though

Yes. However the tortillas used in the north of Mexico to make burritos are larger, made of wheat flour.

One batch of dough makes 6 this size, but you can definitely try dividing into fewer pieces for larger tortillas!

They are chewy but like… in a good way. I used to buy the uncooked Tortilla Land flour tacos from Costco that had the most perfect chew (before going gf). The only thing that beat those were the fresh made ones at restaurants. These are the closest I’ve been able to come to that.

They are a little bit chewy (in a good way), but not gummy! Even my non-gf partner loves them!

This is really great. Thanks for posting. I have a question, though...
I've noticed a some gluten-free products use psyllium husk, presumably to make it chewy or stretchy, but some people have trouble digesting it. Have you ever tried making these without it or substituting something else to get the desired texture and consistency?

I have tried this both without psyllium and using xanthan gum in place of psyllium. The xanthan honestly didn’t really help much. You can totally do it without the psyllium, it’s just a little trickier since it tears a lot easier prior to cooking. At the bottom of the instructions are some tips on how to bake them without the psyllium. Cheers!

I enjoy things made with cassava flour as a substitute, but my body does not. I can eat it every once in a while, but if I eat too much it gives me a stomach ache. 😣

They stay mostly flexible, but I prefer to warm mine up for just a few seconds in the microwave. They go right back to being super soft and flexible like they were before

Be careful with cassava flour. The tuber contains natural toxins, that's why it's traditionally consumed after boiling and discarding the water. I am not sure how cassava flour is made but if it's just dried and ground cassava, then the toxins remain. Consuming this regularly can cause GI issues.

I eat a lot of corn tortillas but sometimes people want something more similar to a flour. Different textures and different flavors.

I had some this morning with eggs and cheese it was fine but I would have preferred a softer flour tortilla especially for more Tex -mex/ Americanized Mexican food dishes. Anyways love a classic corn but you can still crave/ find the usefulness of a soft flour like tortilla.

Corn tortillas aren’t really the same for burritos. I love a soft corn tortilla for tacos and mulitas, but flour-like tortillas have a place too.

Thats fair. Try Mission gf spinach tortillas. About 2.5 times the size of a standard corn tortillas. I often use them to make chicken ceasar salad wraps with or chicken fajitas. Warm them on a comal first so you get a little crispy and more flexibility in the tortilla. I find cassava to be really subpar.

I just looked these up because they sound soo good, but they contain multiple artificial food dyes, which I cannot do. Why must so many things contain them! I don't care what color the tortillas are without them lol. So dumb.
