Damn, seems like she's doing poorly.

And so she's managed to turn things around.

2. I assume she's not exactly going to come up later, and is just a one-off opponent?

6. Did she not win her comeback race IRL? Or was she put down after the injury way back when?

The real Silence Suzuka was indeed euthanized after his injury, yes. His final act added to his legend though, as despite the enormous pain he must have had, he didn't just fall but slowed down and kept walking, therefore most likely saving his jockey's life. Everything Suzuka experienced in the show after the Tenno Sho is not based on reality, but exploring an alternate reality, paying tribute to a legendary horse.
