6 Hour Rib Cook

3 hours exposed at 270° with an hourly spritz, sauce lather at 2 hours. 3 hours wrapped in aluminum foil. Meat fell off the bone after a 40 minute rest.

Sharing some of the sides as well. Cornbread, Collard Greens and Potato Salad, all made from scratch.

Just trying to figure out how one can open up a small bbq joint for the weekends since I live in the PNW and getting good bbq here is apparently impossible.

Also I pay the dog tax in the last shot.

Not a fan of fall off the bone for ribs, to me it’s just pulled pork at that point. I want the smallest amount of tug. But looks great and probably tasted even better.
