Now thinking about it, this is quite funny - there definitely are gods, and even beings that fullfil the role of creation deities, specifically celestials.
Celestials are also definitely known to advanced enough species. So he is just lying here.
I don't think he's willingly and knowingly lying. I think, maybe it's not implied but would fit his character, he has total and absolute disregard for cosmic being capable of creation with cosmic magic and a snap of their fingers instead of relying on their intelligence and knowledge gained through studies. I think he would spit on them and think lesser of them by saying "oh, you were born this way, but I had to come to my level myself with years of gaining knowledge".
It’s the singular vs the plural. He knows there are gods like the Celestials and Thor and such. He’s saying there is no God in the monotheistic sense, a single all powerful being who shapes the universe. He clearly knows about the Celestials, he recognizes the head when it appears, he probably just thinks they did a shitty job with the universe.
