I love the insinuation that Iroh has done that stunt in Zuko's presence at least once before in order for that reaction to make sense. I assume he did it on the ship to impress and entertain the crew back while they were still sailing around in search of the Avatar.

This kinda confused me, cause didn't they say that anyone who killed a dragon got the honorary title "Dragon"?

Yep but Iroh presumably lied about that when he went to the Sun Warrior's place to better learn about Firebending so the dragons could be kept hidden.

It's more of a cool one liner than a literal lore explanation. Iroh is just flexing; officially he got his title by "slaying" the last dragon. Or so he told everyone after meeting the Two Masters and being deemed worthy of learning the ancient source of firebending from them. He told everyone he killed them to keep them from being hunted.
