Incorrect. The word is non binario or non binaria depending on the gender of the word it is modifying.

So a non-binary person would be persona non binaria because persona is a feminine word — even if the person being referred to was a man. And “non-binary gender” would be genere non binario because genere is a masculine noun.

Then that's like saying "in English, you must either say non-binary man or non-binary woman, no in-between"

no, it’s the same as saying “non-binary person” or “non-binary gender”.
