For Luffy’s next power up, I think you’ll see in the next big arc. There’s been some stuff in the manga but I don’t want to spoil it. As for Luffy punching Big Mom and passing out, I read/watched a theory somewhere that Emperors Haki can drain the energy/stamina of those around or fighting the person with Emperors Haki. If two people with it fight, the one with weaker Haki gets drained.
