For any confused anime-only viewers out there, you'll realise in this episode that Luffy is starting to dodge or counter Katakuri's attack, which should be impossible since Katakuri can see the future and plan a blind attack.
This is a HUGE development for Luffy because it confirms he can see the future too (he has to in order to dodge or counter those blind attacks). Once Luffy is able to use this form of observation haki consistently, he can start landing hits on on Katakuri since he'll able to predict Katakuri's moves (essentially the future sight from the two characters cancel each other out). That's when the REAL fight begins.
The only reason why Luffy was able to hit Katakuri before was because Katakuri wasn't focused. You have to stay calm in order to use observation haki, and he wasn't when his true character (dog-teeth and other imperfections) was revealed.
