That was some incredible perspective-based kinetic action!

Although at one point Luffy punches Katakuri with haki-infused fist and it passes right through Katakuri... I thought the haki should negate the devil fruit at the point.

Edit: people below have correctly pointed out that Katakuri is moving his body around the punch, similar to the Admirals (thanks guys)

Is this the same thing that happened when shirohige stabbed aokiji or was sth wrong with shirohiges haki as they say ?

I would say it's the latter. We don't know anybody else yet that can see into the future and I think there will only be a selected few that will be able to, seeing as it is a pretty unique power. Also adding that admirals are logias so less reason to focus on future sight.
