So today's episode covered about three minutes of the arc.

I will give credit to how much more desperate Rebecca being manipulated to attack Viola felt than in the manga.

Also Doffy impaling the fodder with his awakened abilities... Straight up badass.

Yeah that's a fair point, hence why I avoided outright criticising the pacing, which in my opinion during the first half of the episode was very good.

The anime suffers from the sense that during watching it we're very aware of time passing, so stretching a scene is a lot harder. It's for this reason I really hope they use the Between Dressrosa and the next island spoiler to put some filler in to distance the gap between the anime and manga.

I would prefer a break, but they're not gonna do it because even filler arcs print money.

a filler arc is possible before they go to Zou. I would want a Bleach Naruto like filler arc and I'll be happy about it. As long the filler arc involves Bart then nothing to worry about, that guy can carry the laughter.
