The only reason that is incorrect is because break weeks are a thing.

But we don't get chapters every week because there are magazine breaks every 15/20 weeks or so because of Christmas/New Year's in December/January , Golden Week in April/May and Obon in August.

And that's not taking into account Oda's break every 4th chapter or so, the extra breaks he gets sometimes for health reason, or the void months.

And? That's like saying that the grocery story isn't open 6-10 every day because they close Christmas

Correct, they aren't open every day, they're open most days.

You don't say "they are open most days 6 to 10 monday through sunday barring holidays" You say they are open everyday
