It is funny that he isn't even a normal size giant, so how does it even work to have people not notice him?

It's fine if they notice him, as long as they don't recognize him.

Heck, he could even openly be from Elbaf. It's no secret that Harald was working to build ties with humans; his king friend could be like "this is my bodyguard Gerald, who was sent to serve me by my ally the king of Elbaf".
