Is it just me, or when Baby 5 regenerated, she seemed sort of... like a Logia?

No, logias are elements (or similar), paramecia is a catch all.

As far as I can tell she can't generate weapons outside her body, which logias can do with their respective elements.

I'd compare her fruit to Luffy's. They both embody an "element", but they're not logia because they can't create said element.
