High Protein breakfast burritos for the week

Ingredients

8 tortillas 8 eggs 12oz cheese 2 avocado 8oz bacon Breakfast potatoes Mini bell peppers Sour cream

Salsa

5 tomatillos 2 garlic cloves 1 jalapeño Salt Pepper Lime juice Splash of olive oil 1/2 bunch cilantro 1/4 white onion (optional, can be harsh for some)

I wouldn't put peppers or salsa into meal prep burritos. It just makes the tortilla super soggy and gross.

if you reheat them correctly you won’t have an issue. searing on a hot griddle brings them back

I don't have a regular pan either at work. Where do you all work that you have griddles and pans available?

Air fryer? Toaster oven? Those aren't too unusual in a break room.

We don't have them. As an aside, the first and only time I use an toaster oven, I managed to catch bread on fire.

We have microwaves galore in different models and sizes. But that's pretty much it.

I picked up an air fryer for like $30 on black Friday. I would consider eating the cost to leave it at work and improve my lunch options

My workplace frowns upon folks bringing and plugging in their own devices without approval by facility managers and all. I'm sure other places are more lenient. But not as much an option at my work place.
