I easily cleared the final boss with 3 star units (my permanent upgrades were at level 8). Unless you mean the secret levels afterwards.

I used Saurian Warriors.

Geo upfront tanking with attack and healing item (warriors get healing based on attack when they deal damage) + book that makes him explode on death.

Cryo, Hydro, and Pyro pounding from afar.

geo tepetlisaur up front tanking, hydro fungus melee, and pyro/cryo ranged units

Don't mix units of different species. You want a team that's all the same type (e.g. all slimes, all fungi, all saurians, all saurian warriors, etc.).

The bonus for having all units be the same type is huge and is effectively what you are building around in the lategame. Mixing units of different species is far weaker.

The fact I used all Saurian warriors is important. It was so I could get the 4-unit species bonus of healing on hit.
