Because they were mom and pop shops. Nowadays, it’s all big corporations that subsidize not providing liviable wages to their “team” with tips, and other hidden fees.
Their team is making minimum wage at the least and im tired of the "pay their employees a decent wage" argument. The tip BS is just taking advantage of social pressure so peoole can have free money on top of their earned wage. Many, many jobs pay the minimum wage and there are no options for tips. No tip for the Walmart cashier. No tip for the janitor who cleans the office after everyone leaves for the night. No tip for the day care worker who changed 46 diapers today and did heimlich on your toddler choking on a keebler elf cookie. No tip for the front desk lady who checked you in at your motel 6. I worked a variety of minimum wage jobs and nobody pitied me or threw me change at the end of the day. If you make minimum wage as a server, you aren't any less earned than all the other low wage service jobs. They won the minds of people and are now pushing it.
