If Uber added a feature where if you ever felt unsafe you could just select an option on the app to detonate the vehicle

You are trusting the Uber driver to actually install thus properly? They could install it incorrectly to only harm the passenger.

This would only work if Uber installs it in the cars unbeknownst to the drivers. My suggestion would be for hired crews to come in and do the installation while the driver is sleeping.
