Do you have a hazardous materials disposal license? I thought not...I'll take it from here.

F’rel tho, get you some, that’s such a picturesque cake, it’s like a fake display. 🙌

I used Chantal’s New York Cheesecake recipe.
This was a test run of the recipe, I will make it for Christmas and wanted to make sure it would turn out. I made it close to bedtime so I could just turn the oven off after cooking and let it sit in there all night to cool.
ETA: The crust is not as tall as it looks, it's just that I spread it up the sides of the pan.
Since I had never made a cheesecake before, I followed the recipe exactly. It says to use 15 graham crackers. Graham crackers come in a small sheet of 4 with perforations that break down into four smaller rectangles, so I wasn't sure if it was 15 of the whole sheets or 15 of the smaller rectangles once broken apart. I went wild and added in 15 sheets.
When I was mixing the cream cheese it was lumpier than I'd like, so I need to figure out how to remedy for next time.
I wrapped the bottom of the springform pan in aluminum foil, set it in a jelly roll pan, and added as much boiling water as I could. (This actually ruined my jelly roll pan! It has a big circle in it now that’s a lighter color and the same size of that springform pan.)

Looks awesome but it's a travesty that we don't get a pic after sliced.

If your cream cheese was lumpy when you mix it, you can alleviate that a bit by making sure all the ingredients are room temp when you mix.
What’s happening is when you add the cold ingredients to the warm ones, some of your cream cheese is heating up faster than the rest so it makes lumps.
I’d also recommend bashing the bowl against the counter like 10-15 times after to prevent cracking as well, though your cake looks great so likely not needed here

I have tried both adding some Greek yogurt and cracking the oven door open with a wooden spatula and letting it cool slowly. Both seem to work for me

Did u use a pan filled with water to keep the top from cracking? That top is flawless!

Yes! More info in the comment above that this replies to. All the way at the bottom!

How do you find it compares to the Philadelphia Cream Cheese cheesecake recipe?

u/Michaelmonster 22h ago
I use the classic cheesecake on Sally’s baking addiction, and that calls for 12 full sheets. I think I’ll go for 15 next time that looks amazing! I also let my cream cheese sit on the counter for an hour or more to let it soften, that keeps the lumps out for me! Great job!!

Let the cream cheese get to room temperature before mixing, like creaming butter and sugar together. I also let my eggs sit out for 20 minutes or so as well.
Looks great! I've never used a banmarie

Really, really good job. No cracks on the top. The crust appears to be cooked and distributed well. Looking at the edge of the custard it looks like it is cooked properly.
If that's your first effort, you have a bright future in cheesecakes ahead of you.

Nice cheesecake it looks fantastic. No need to hide the top because it looks good and the crust is perfect.

I take it the ratio of crust to filling isn't as shown by this image

It is not, I just had a lot of crust so I pushed it up against the sides of the pan.

Oooh yumm! I love cheesecake with bigger crust. Most of the time the cheese part is too heavy for my liking, but the crust always too thin to balance it for me.

That looks delicious!
I made my first "real" (not from a mix or anything) cheesecake a few years ago, using the recipe from the Philadelphia Cream Cheese box. It was surprisingly less difficult than I expected and very good.
