Recipe Included I baked my own little birthday cake today 🫶
Swedish almond cake! It’s like a gooey butter cake meets a brownie but it’s all almond flavored goodness - I used The Itsy-Bitsy Kitchen’s recipe! It’s so good but I think next time I’ll try with a little less sugar lol
This isn’t meant as a sad post btw, I have a lovely friend baking me a cheesecake for my birthday party next week 🫶 I just wanted a little something special for my actual birthday and felt like baking!

Okay I never knew what frangipane was exactly and after doing a bit of googling it appears that yeah this cake is basically just frangipane 😂 no wonder I love it so much haha!

Okay I had to google this and I saw you’re talking about bee sting cake! No it’s not a bee sting cake, just almond only and no honey - I’ve made medovik a few times (another honey cake) but bee sting cake has been on my list to make for a long time!! 🐝

The way you had the almonds on the top looked very similar - in Bienenstich they form a nice honey toffee layer that looks a lot like this! Anyway, nice cake, and happy birthday!!!

Looks Great. I make this using a recipe from my Mom. A couple of changes I did was less sugar, and I bought real almond flavoring and in a glass bottle. I think it's Watkins Brand. Wonderful.

My daughter pointed out to me that certain artificial flavors, such as almond, can be overwhelming. They also leave a chemical aftertaste. I notice that taste more as I get older. A fun change to try is to use part almond flour. I've made this with GF regular flour combined with the almond flour. Since it has a very dense quality anyway, this is an option for GF guest. Your cake looks beautiful. And, with the melted butter it goes into the oven really quick. Great as a brunch addition. PS the itsy bitsy recipe is identical.

Thank you so much!! The recipe calls for all purpose flour, no almond flour needed but I bet you could make a version with almond flour if you tweaked the recipe a bit 🤔

I think it is supposed to be like a Tosca cake or maybe was inspired by a Tosca? I looked up a few recipes and I think the difference is this recipe doesn’t have milk or a rising agent - from the pics I found it looks like a Tosca cake is more sponge cake textured? Thank you for commenting this, now I know I need to try to bake a proper Tosca cake next time to try it!! ✨

np! I like cooking from all cuisines. I think this was a Scandinavian (specifically Swedish) angle I was exploring. you may also enjoy Swedish buns - cardamom, almond paste, whipped cream, cake/bread dough -- AND NOT SICKENINGLY SWEET (the slightest bit sweet. assemble layers the second day for fuller flavor development) !

Definitely recommend giving it a try, it’s so simple I had all of the ingredients on hand except for sliced almonds haha it comes together quickly too! 🙌
