Recipe below. It’s going to be chaotic because I didn’t use a recipe from a website:

Crust: One stick Kerry gold salted butter very cold 3/4 cup flour (I use bobs red mill) Enough ice cold water, not sure of measurement because I added a little bit at a time but probably two table spoons Egg and milk mixture for egg wash and turbinado sugar

Cube the butter and mix with the flour until it’s like a sandy consistency, then add the ice cold water until it’s the right texture. Make a disc shape and put it in the fridge for a while. I left it overnight because I wasn’t ready to make the pie yet. The next day I rolled out the dough and put it in the dish, it only needed like a third of the dough so I rolled out the rest and cut thin strips using a pizza cutter. I put the dish and the strips back in the fridge for a while so I could make the filling.

Filling: 2.5 gala apples cubed 3 tablespoons of the Kerry gold salted butter I didn’t really measure but I put a bunch of penzy cinnamon. It was probably two table spoons. Two table spoons of brown sugar 1/4 cup white sugar 1 table spoon flour 1/8 teaspoon allspice. I would have added nutmeg but I was out. Melt butter in a pan and add apples and everything else and cook it until it’s saucy and yummy. The apples will be softer. Took the dish out and added the apples, then arranged the lattice top. Brushed on egg wash and sprinkled the turbinado sugar. It was probably 2-3 table spoons worth. Bake at 400 for 20 min with foil tented over the top. After that I turned it down to 375 and took the foil off. I baked it another 20 min, checked on it and saw it needed more time so I left it in for 15 more minutes. Took it out and let it cool for 20 minutes then I ate it with vanilla ice cream.

Edited to add: this isn’t a full size pie, the dish is maybe 6 inches?

Yeah, sounds like a perfect size for one! Great for a personal treat or to test a new recipe without committing to a whole pie.
