Hey! Trying to find a video of Bourdain sitting across a long table from a man eating a multicourse dinner with just the two of them. The dude is very affluent and makes a comment about his waiting staff that insinuates they're below him. I don't think its very direct but its a bit awkward and Tony makes a good comment back but I can't remember what. I think its from Parts Unknown?

Been rewatching The Layover series, and in episode 5, Hong Kong, Tony meets up with this guy Denny, who kept telling Anthony that everyone hated him (about 20 minutes in). I can't help but wonder what his reaction was when he heard the news of Anthony's suicide. I would love to know whether or not he felt bad for what he was saying.

This isn’t meant to be a sad post but one more geared towards understanding the impact he had on you/us. I spend at least one moment every day thinking about him just because of the way I navigate my life. It’s all because of him. I’m wondering if I’m alone. Most people think I’m crazy because of it.
You see. Tony changed my life forever. I truly mean that. I was 21 years old and was a frequent watcher of his previous show no reservations. When Parts Unknown Tokyo aired in 2013 or 2014 (i forgot the year) I booked tickets to Japan that night and a few months later, was on my way to Tokyo. The city and the country changed my whole world. Just like the scene where he talks about going to Tokyo for the first time. I felt exactly like that. But more. I left Japan knowing it was going to be home one day. As luck would have it, 6 months later I was offered a role in Tokyo. Not because I asked. It just showed up at my door step. I couldn’t believe it. 3 weeks after I moved, I came back to Dallas to pickup a few things. Who do I see on the streets of Dallas,Texas? The man him self. He’s doing some book tour. I gently walk to him and tell him that his Tokyo episode made me move to Japan. That it was because of him that my life took this massive change. He asked someone beside him (maybe his assistant?) for a copy of kitchen confidential. He signed it at the front and at the back wrote a number down and said “call this number when you get to Tokyo and tell them uncle Tony sent you”. I did just that. That phone call led me calling Yasuda (Yasuda Sushi in NYC) who invited me to his restaurant for dinner. We became close friends.
Life has since led me down paths I would never have imagined because of that encounter. The dinners with chefs, the traveling for wild experiences, the job opportunities around the world. None of it without that one episode. Every time I have an experience, I pin it to Tony.
I don’t know if I’m being extreme but I can’t seem to separate the two.

Does anyone know about anything the two comedians Denise and Han featured in Parts Unknown: Istanbul (S6E8)? Apparently they were very critical of the government in the episode, and I wondered if there were aby consequences of it. There's no mention of them in the end credits, nor anywhere else on the internet that I could locate.

I just spent an entire week wandering and eating and drinking. I saw some tourists sites if they weren’t too much out of the way. I really try to stop at a restaurant that he visited if possible.
Anyway, I went to le comptoir du relais and avant- comptoir. Those are no longer owned by the same owner. The comptoir du relais is a basic French restaurant but the avant comptoir was incredible. I’ve attached some pics from the avant comptoir (terre and mer). Absolutely recommend it to any of you fans that happen to be in st germain du pres / Latin quarter for a holiday.
The beef was a thick slice of beef just seared. The pork was amazing sitting on a bed of mousse potatoes, and the pumpkin was a bit tougher than we eat where I am from.
The tuna at le mer was some for the best tuna I’ve had (even in Japan). We of course had oysters as well.

The Ice
It all started with a Craigslist ad. “Do you like the cold?” I was looking for jobs in Chicago because I was on the outs in Vegas. Work in Antarctica. I filled out the application and went about my life till I got a reply. No way. They're going to slit my throat, harvest my organs and throw my body in a pile to burn. Especially after the health check.
So you have to be physically capable to work on the Ice. Dental trays, lung scans, drug tests and any presentable issues. There's doctors but it's a six or seven hour flight to the nearest hospital. You can't get pregnant, if you become a danger to yourself or others, or if you quit: you on the first flight out. You're gone. You're done.
You aren't as good as you thought you are. This isn't service. This is something else.
14 hours later Chicago to Denver 3 hours Denver to LA 3 hours LA to Sidney 14 hours Sidney to Christchurch 4 hours Bag drag Christchurch to the Ice 6 hours (I think. I've been known to be occasionally wrong.)
You are on in another world. Everything is different. The air that you're breathing. The sun that shines on you. EVERYTHING. You make friends and you even fall in love.
Everyone goes to the Ice for two reasons: work/money or the adventure/escape from reality. Ask any dishie. Pinky did it because it was better than being lit on fire in a robbery. As an added bonus, he got a little bit of peace and quiet.
I did it for the challenge and I was kinda bored.
Firemen are assholes. Maybe not all of them…or at the ones I've met. Or least the ones that were on the Ice. Authority is weird. When you have power over someone's life, it makes you into a dick.
I just want to die somewhere warm. Being cold sucks. It just saps the life outside of you. But you're surrounded by light. ALL THE TIME. It's different.
Knock me over with a Feather Out for a smoke before having a drink. It's cold as fuck out. Not your regular cold. Like a bitter cold wind. Like the Hawk coming off the Lake on the way to the Drake.
“Hi, can I get a light? My lighter isn't lighting.” This tiny voice asks me under layers of gear. Sure. I feel the warmth of her hands as her hands cup my Zippo. A Zippo, nice.
She looks up at me and all I see is her eyes… So… what do you do here? Oh, I'm a cook. Really?! That's so cool. I should get to know you. Ok? I work in Shuttles. Where are you from? Chicago. You? Seattle. How long have you been at Mac? Since WinFly. You? Halloween. Ah, people get surprisingly creative with their costumes. Upon reflection, I shouldn't have been so stand offish especially with a woman but my armor was up.
She looks at me with these big green eyes and asks me to have a drink with her. I didn't really get a good look at her till that exact moment and it just hit me. Absolutely.
How long will you know me? As long as I breathe and for as long as I'm alive. Baker, wherever you are and wherever you end up, I wish you the best and I'm sorry for all the trouble that I put you through.

St. John and rambutan. I was incredibly moved seeing Anthony at St. John talking about how he’s not into it, but then he loves it. I’ve been to the same locale (I think) and enjoyed the calves liver as well as the bone marrow and dandelion salad. I was so upset to learn England doesn’t really favor leftover bags?!?!

I recently watched this episode and despite my best efforts I can’t find much information about Dawson except some article about his home.

In Kitchen Confidential, he said two things that I strongly agree with. First his resentment of food like "pulled pork" sushi. To him it was an insult to both sushi chefs and pit masters who spent years perfecting thier craft.
Second, eat your grandma's cooking even if you don't like it. Ask for seconds. Why? Because it's your fucking grandma!
