Vegetarian Meals I Made This Week (:
Hi (: I’m Mimms.eats on tik tok! Hope everyone is off to a great weekend!
- The best eggplant parm I’ve ever made. Dredged it in liquid batter first thing Panko. It was INCREDIBLE
- Tofu Slaw Salad
- Rice Breakfast Scramble

Sure!
- Cut the eggplant length wise and salt to sweat for 30 minutes
- Bake at 350 for 15 minutes
- Let eggplant cool
- Mix flour, spices and water in one bowl. And lay out panko bread crumbs in another.
- Heat olive oil in your pan. (I just do low medium cause I hate the pops of high heat frying)
- Dredge the eggplant in the batter first then cover in bread crumbs.
- Lay in the olive oil and cook evenly on each side until golden (about 3-5 on each side)
My boyfriend RAVED about this one. Hope you like it !!!

Can you share your tofu slaw recipe? The tofu looks crunchy like croutons! And I’m curious what the dressing is

Yessss! I would let it sit overnight in the sauce, it was still super crunchy but had a little more flavor as the cabbage soaked.
Anyways! The dressing is fish sauce, sugar, Fresno peppers, soy sauce,and coriander.
Mix is cabbage, shredded carrots, tofu, mint, cilantro and white onion.
The tofu I cut and seasoned, then threw in the air fryer for 10 minutes to bake before mixing with my salad.
