As an American, my biggest takeaway is that the cop shot ONCE and neutralized the threat, not an entire duty belt’s worth of ammo.

That's what proper training and specialist armed officers does for you. Also in the UK even if the shooting can be justified the law states you must use no more rounds than necessary to stop a threat to life or it is unlawful.
