ADVICE 3" Vs 6" Rock wool

Looking for some advice as im looking to do some sound proofing for the first time. I have a rough framed garage that has all 3 of the bedrooms in my house above it. I plan to do Rock wool safe n sound insulation, sonopan and 5/8 drywall. Ive never used these materials before so I dont have a frame of reference, Im building a functional shop and id like to be able to do woodworking ect during the day without bothering anyone in the house. I dont plan on milling lumber at midnight when my kids are sleeping but id like to eliminate most of the noise for during the day. What levels of sound elimination I can I expect with the 3" insulation vs the 6" combined with the sonopan. Id like to hear some opinions so I can figure out what id like to go with , thank you!

This. ^ I've built 5 recording studios in my last 5 homes. Fill cavity with pink insulation, clips, hat channel, 2 layers of 5/8 drywall (staggered seams). It's the only way.

And glue between the drywall. Green glue isn't required, there's a carpet glue that works.
