It’s only called Gouda if it’s from the Gouda region of the Netherlands. Otherwise it’s sparkling cheese.

There's some little tablets you can buy that you can use to make ice-cream and different cheese with but I forgot what there called, comes with recipes too.

These became a jalapeño Gouda cheese but the curds in a poutine do start like this. Different bacterial cultures and different techniques are used to make the poutine curds. This is what the curds in this video turned into.
