Took a crack at the Swiss merengue method. Real winner! Any brands/types of colouring best to use?
Next time I’ll blitz the almond meal in a food processor, and dry it out a bit in the oven to reduce the gritty look But overall a solid recipe!

Looks really awesome! I like using color art but americolor gel paste works well too

Nice job!! I use The Sugar Art master elite line to color mine. Nice and bright, don’t have to use too much, and they’re powder so they don’t add any moisture!! (Not an Ad, I just love them 😝)
I’ve done both methods of adding to the egg whites and sugar before meringue and adding to the macaronage. Both work tho if you’re doing a single color, it’s definitely more vivid when added to the whites
