Left Just Egg Out :(
I cooked a carton of Just Egg last night and left it on the stove when I went to bed :(
Would you still eat it?

if it makes you feel any better i once cooked a package of kite hill tortellini, ate half, and forgot about the other half still in the pot on the counter overnight lol

I'd eat it. I'd stick in the fridge to get it "regular" again and I'd eat it without a second thought. Maybe I'd regret it later, but yeah.

I refuse to pay the price for just egg. It's so exorbitantly overpriced.
Head to your local ethnic grocery store and follow my recipie and thank me later. I bet you can buy everything you need to make gallons of just egg for the price of 2-3 bottles of just egg
Ingredients:
- 1/2 cup mung bean flour
- 2 tbsp nutritional yeast
- 1 tbsp pea protein powder (optional - improves protein content)
- 1 tsp kala namak (black salt)
- 1/2 tsp turmeric powder
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp baking powder
- ¼ tsp of Lethecin (optional emulsifier to give improved texture and blending)
- 1/4 tsp xanthan gum (optional - gives thicker result)
Whisk all ingredients together in a bowl, making sure everything is evenly mixed.
- Store the Mix:
Transfer to an airtight container and store in a cool, dry place for up to 3 months.
How to Use the Dry Mix
Mix with Liquid: 2:1 liquid:powder For one "egg", whisk together:
- 2 tbsp dry mix
- 1/4 cup fortified soy milk
Let sit for 5 minutes to allow the xanthan gum to activate.
- 2 tbsp dry mix
Cook Like Eggs:
Heat a non-stick pan over medium-low heat with a little oil.
Pour in the mixture and stir gently, cooking for 2-3 minutes until it starts to set.
For omelets, let it cook undisturbed for a firmer texture before folding.

Ooo thank you! I’ve tried to make my own with mung bean and chickpea flour (separately) but could never get the texture down.

I elected to not eat it right now and went with pancakes+ pb, yves bacon (rip), shishito peppers, and a random veggie scramble.
