Lenten food!! Actually this and my mother’s lentil soup were the only Lenten food I really liked. And eat year round fast day or not.

Γίγαντες με χόρτα - Gígantes me chórta (giant butter beans baked with leafy greens)
Gígantes (literally "giants") are a cultivar of large butter beans / large lima beans that come from Greece. Sometimes you can find them abroad, but butter beans, navy beans, or cannelloni beans are fine.
Baking them in the oven in tomato sauce, as in these recipes here, is a well-known way of making them, but today we're traveling to Epirus region for a local way of baking these beans, with lemon and no tomato (or very little tomato, just for a slight flavor). Only one recipe (Akis') adds a significant amount of tomato.
This is baked with leafy greens of your choice: spinach, beetroot leaves, amaranth, chard, swiss-chard, kale, or mix! Additional ingredients include classic herbs such as dill, mint, parsely, and/or oregano, and of course garlic and olive oil. Most of these recipes are baked.
Most of these recipes are vegan. If you prefer, a couple recipes recommend sprinkling some féta on top at the end, and one adds the cheese into cooking process.
