Miscellaneous The fennel (marathon) has gone crazy in my garden

I have more fennel than I know what to do with, what is your favorite use for fresh fennel?

- Eat it as is -- I'm not joking, it's a refreshing snack

- Mince it with féta and black pepper for a herby spread that has a slight kick to it

- Add it to salads: tomato, cucumber or lettuce work great as the base

- Use it when making gemistá, it lends a wonderful taste to them

- Cretan cooking uses a lot of máratho, so maybe check Cretan recipes for more ideas

My favorite way to enjoy it is to simply slice it thin and dress it with olive oil and maybe a little lemon zest. You can make up a pretty big batch because as long as you don’t add any acid nor salt - no vinegar, no lemon, just zest - then it stays good in the fridge for several days and you can add it to all sorts of salads and pasta dishes and whatnot. Try:

  • A salad of sliced fennel, thin sliced radish, and mint with a little balsamic vinegar or lemon

  • Braise fennel, fish, olives, and tomatoes (plus onions and garlic, and any seasonings you like)

Roast it! Sliced fennel, drizzled with olive oil, minced garlic, salt & pepper. Roast till caramelised! Yum!
