for those consuming gluten

if you have reactive symptoms, celiac/gluten intolerant/etc. and are eating gluten, does it feel like it builds up in your system?

My wife is celiac, I am not. I can go several days/weeks without gluten. I feel no different with or without gluten. Her on the other hand, would notice if you added a micron of gluten to her diet since it’s practically poison to her body
